This Semillon has beautiful natural brightness, with a tight and bright core of green and yellow citrus; lemon and freshly-cut green apple at its centre, plus guava, pineapple, and Tahitian lime zest all packed in with aromatic hints of Nashi pear. At 10.5% alcohol the varietal lemon zest flavours reign supreme, with delicate juicy ripeness from start to finish. The acids are gentle yet fresh, generating a satiny texture and softness like white figs, providing crunchy flavour length and vibrant peristence. As usual this Semillon shows wonderful pedigree and potential.
The Hunter Vintage of 2017 was an excellent growing year for both whites and reds - this Semillon benefitted from very dry conditions, with an abundance of sunshine while the fruit was on the vine. With record heat in early January an early vintage was expected, however fruit ripened normally and the pick from our 'Field of Mars' vineyard estate was staged across five days. Beautifully clean, handpicked bunches promptly arriving at the winery between the 19th and 24th of January.
Whole bunches were first destemmed and crushed before being loaded into our press, with a soft 'champagne' pressing cycle to get the purest, freshest Semillon juice. From here, the juice was transferred to tank for a temperature-controlled primary fermentation over approximately seven days. Batches from our own vineyard are blended together, and bottled without fining or malolactic fermentation.
