The weather was again challenging for the area’s vignerons. Cooler Summer temperatures prevailed, with recurring showery weather throughout January, fruit ripening was slower than usual. We selectively hand harvested on 14th, 18th, and 19th January – well before many others in the Valley – bringing in pristine fruit with fine, bright, zesty flavour and a crisp natural acidity.
All fruit was hand-picked into slotted bins and chilled overnight to 5°C. After pre-chilling, the grapes were destemmed, crushed, and lightly pressed using a centre-membrane press, and then immediately clarified by solids-floatation. Fermentation of the clear juice began within 6 hours, using a selected pure yeast culture in stainless steel tanks, at cool to cold temperatures to maximise and retain varietal freshness.
This Semillon, as usual, shows the transparent elemental purity coming through from our KTW vineyard on Hermitage Road. It beams with sensational intensity of lime and lemon, plus fine delicate perfumes and flavours of cut fresh lemon-grass and white-flower, with guava and fejoa giving citrus-zest energy. Classically refined flavours, combining with a powder-like silkiness and wonderful length, define its pedigree and potential.
