The 2015 Vintage weather in the Hilltops NSW was ideal, with generous sunshine and dry weather producing super-ripe fruit across all varieties. Each variety achieved maximum ripeness and provided deep, full tannins to match. The Hunter – by comparison – had challenging weather through much of the Vintage, with dry conditions finally allowing the late ripening red varieties, like Cabernet Franc, to really shine.
Since the first Forres Blend was made in 2000; this wine has seen an exciting evolution, with the grapes sourced from a range of areas and classic varieties, always a slightly different blend.
Each of the major three varieties are harvested at the highest levels of ripeness possible, and transported overnight from the vineyards in Southern NSW to our winery for processing, coming in on the 13th and 14th March.
Each batch of fruit is fermented, pressed, and oak matured separately, until blending in June 2016.
Combining powerful and inky Cabernet with opulent and soft Merlot and Shiraz, this blend shows the best of colour, flavour, and tannin richness. Typical of premium fruit from the Hilltops region, it offers layer-upon-layer of blackberry and black cherry, with mouth-filling intensity yet gentle and deep tannin softness. Above this powerhouse sits a generous touch of Hunter Cabernet Franc, giving a fragrant herb lift and fresh astringent brightness, providing beautiful fruit completeness. Keep it if you can for cellaring beyond 10 years.
